Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice flour
Thickens the sauce as its starch swells when heated in the liquid.
Grated chocolate
Provides the main chocolate flavour and body of the sauce.
Superfine sugar
Adds sweetness and helps balance the bitterness of the chocolate.

The step that matters

Pour the smooth mixture into the saucepan. Rice flour must be fully dispersed in cold water first; added as lumps or to a hot liquid unevenly, it clumps and cannot thicken smoothly. Stirring while the sauce simmers keeps the starch evenly distributed.
