What each ingredient does

Brown sauce
Forms the body of the sauce and supplies its main savoury flavour.
Vinegar
Adds acidity that sharpens the flavour and is concentrated by reducing.
Capers
Add a sharp, salty bite and briny flavour to the sauce.
Gherkin
Adds tangy acidity and a crisp, pickled note.
Onion
Contributes sweetness and aromatic depth as it softens in the vinegar.

The step that matters

Reducing the onion and vinegar. Boiling until considerably reduced concentrates the vinegar's acidity and softens the onion. If it is under-reduced, the sauce will taste thin and sharp once the brown sauce is added.
