Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold mashed potatoes
Form the bulk of the dish and crisp in the pan as they heat through.
Cold greens
Add color, texture and a fresh, slightly bitter flavor to the mixture.
Onion
Adds sweetness and savory depth as it browns in the fat.
Thin slices of cold roast or boiled beef
Contribute savory flavor and browning from the quick fry in fat.

The step that matters

Stir until thoroughly hot. The potatoes and greens are already cooked, so they only need to be heated through. Leaving them in the pan without stirring lets the bottom scorch before the center is hot, while over-stirring keeps them from browning and crisping.

Flavor stand-ins for the potato

How well each one fits the dish's main ingredients (beef, onion, butter, pepper, vinegar):

  1. Potatothe original
  2. Capsicumabout as good a flavor fit
  3. Chiveabout as good a flavor fit

Fit is the average pairing score against beef, onion, butter, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
