Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. Mix the flour, milk, egg, and a little salt into a smooth batter.

Bake

  1. In a Yorkshire pudding tin, add enough dripping to form a thin layer when melted.

  2. Pour in about one-third of the batter and bake until set.

  3. Add the seasoned meat, then pour in the remaining batter.

  4. Bake quickly until it has risen and set, then reduce the heat and cook until fully cooked.

  5. Serve in squares, arranged neatly overlapping on a hot dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the batter's structure as its starch sets during baking.
Egg
Binds the batter and helps it set and rise in the oven.
Milk
Adds moisture and helps the batter cook into a tender, set custard-like base.
Beef steak
Provides the main protein and savoury flavour in the dish.

The step that matters

Heating the dripping before the first batter. The tin and fat must be very hot so the batter sizzles on contact and begins to rise quickly. Starting with cold fat can make the batter spread and cook unevenly, so the pudding will not rise well.
