Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Provides the main meat and, through slow simmering, rich gelatin that gives the broth body.
Rice
Added late to thicken the broth as its starch softens during simmering.
Carrot
Adds sweetness and aroma to the broth as it cooks down.
Onion
Contributes savory depth and aroma to the broth.

The step that matters

Keeping the simmer gentle. A rolling boil toughens meat fibres and makes the broth cloudy, while a gentle simmer lets collagen slowly break down into gelatin, keeping the veal tender and the broth clear.

Swap the onion
