Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set gently with heat, giving it a rich, smooth body.
Cream
Adds richness and moisture, softening the sauce's flavour and texture.
Béchamel sauce
Forms the base sauce that coats the chicken and carries the other flavours.
Lemon juice
Adds acidity that brightens the rich sauce and balances its fat.

The step that matters

Thickening the sauce with egg yolks. Egg yolks thicken by gentle heat, but if the sauce boils they can scramble and turn grainy. Keeping it hot without boiling keeps the sauce smooth.
