What each ingredient does

Chicken
Forms the main body of the dish, providing the substantial meat that the sauce coats.
Mayonnaise sauce
Adds richness and fat, giving the coating a smooth, creamy texture.
Aspic jelly
Gelatine-based setting agent that firms the sauce and gives the coating a glossy finish.

The step that matters

Pouring the sauce over the chicken. The sauce must be cool, not warm, and poured carefully so it coats evenly. If it is too warm it runs off, and if it is too cold or thick it clumps. Letting it set fully before decorating prevents the decorations from sliding.

Swap the cucumber

How well each one fits the dish's main ingredients (chicken, sauce, truffle, chervil, endive):

  1. Shallotfits better
  2. Chivefits better
  3. Lettucefits better
