What each ingredient does

Chicken
Provides the main protein; partial cooking first lets it finish tender in the simmering sauce.
Macaroni
Provides the starchy base that absorbs sauce and gives the dish its body.
Tomato sauce
Adds acidity and body, forming the main flavor base of the sauce.
Espagnole sauce
Adds a rich, thickened brown sauce base that gives depth and body to the dish.
Lemon juice or tarragon vinegar
Adds acidity that brightens and balances the richness of the sauces.

The step that matters

Simmer gently for 30 minutes. Boiling rather than simmering can toughen the chicken and break down the macaroni and sauce. Gentle heat keeps the meat tender and the sauce smooth while the flavors blend.
