Why it works: Pistachio and nuts match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 425 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓
Fowl Galantine of
Ingredients
Directions
Prepare the fowl
Bone the fowl and cut it down the center of the back.
Spread the fowl out on a table and season the flesh well.
Distribute the meat evenly to ensure all parts are of equal thickness.
Fill and roll
Spread half of the sausage meat on the fowl.
Place narrow strips of bacon, slices of egg, slices of truffle, and intersperse the pistachio nuts on top.
Season liberally with salt and pepper, then cover with the remaining sausage meat.
Roll up tightly and secure in a cloth.
Cook and press
Simmer gently in stock for about 2 hours.
When cooked, tighten the cloth and press between two boards or dishes until cold.
Glaze and serve
Before serving, glaze thickly and garnish with aspic jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Fowl
- Forms the main body of the galantine and provides the cooked meat that is rolled and sliced.
- Sausage meat
- Adds moist, seasoned body that fills the roll and binds around the fillings.
- Ham or bacon
- Adds savoury flavour and fat that keeps the filling moist during cooking.
- Hard-boiled eggs
- Give a firm, pale contrast to the meat when the roll is sliced.
- Truffles
- Contribute a strong earthy aroma that perfumes the meat.
- Pistachio nuts
- Add crunch and colour to the filling.
The step that matters
Rolling and pressing the cloth-wrapped roll. A tight, even roll with consistent thickness cooks evenly and holds its shape. Pressing while cooling squeezes out excess moisture so the meat sets firm and sliceable.
Swap the nuts
How well each one fits the dish's main ingredients (meat, ham, egg, truffle, pistachio, pepper):
- Walnutfits better
- Chestnutfits better
- Almondfits better
- Nutsthe original
Fit is the average pairing score against meat, ham, egg, truffle, pistachio, pepper. Candidates are from the same food group and used in at least 100 recipes.
