  2. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and, when heated, help the custard set smooth and firm.
Egg whites
Set with heat to give the custard structure and a light, tender texture.
Milk
Provides moisture and the soft body of the custard as it sets.
Sugar
Adds sweetness that balances the eggs and milk.
Coffee essence
Adds the coffee aroma and flavour that defines the dish.

The step that matters

Pouring the hot milk over the beaten eggs. Adding hot milk slowly while stirring constantly gradually warms the eggs. If the eggs heat too quickly they can scramble, leaving lumps instead of a smooth custard.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
