Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk as it cooks, giving the blancmange its body and set.
Milk
Forms the liquid base that the rice starch thickens into a smooth custard.
Castor sugar
Sweetens the dessert and adds a little softness to the set texture.

The step that matters

Stirring the infused milk into the blended rice. Adding hot milk to the rice while stirring continuously keeps the starch dispersed, so the mixture thickens smoothly without lumps.
