Rhubarb Wine

Ingredients

Directions

Prepare the rhubarb

  1. Wipe the rhubarb with a damp cloth and cut it into short lengths, leaving the peel on.

  2. Crush the rhubarb thoroughly with a wooden mallet or heavy potato masher in an earthenware or wooden vessel.

  3. Pour the cold water over the crushed rhubarb and let it sit for 10 days, stirring daily.

Ferment and clarify

  1. Strain the liquid into another vessel, then add the sugar, lemon juice, and rind, stirring until the sugar dissolves.

  2. Transfer the mixture into a cask and add the isinglass dissolved in a little warm water.

  3. Cover the bung-hole with a folded cloth for 10 days, then securely bung the cask.

  4. Allow it to remain undisturbed for 12 months.

Bottle and use

  1. After 12 months, rack off into bottles and use.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the main flavour and acidity, and its juice becomes the base of the wine.
Sugar
Feeds the fermentation, which turns it into alcohol, and sets the wine's sweetness.
Isinglass
Fining agent that helps clear the wine by drawing suspended particles out of it.

The step that matters

Sealing the cask during the first 10 days. Fermentation gives off gas and can push out foam. A loose cover lets the wine oxidise or spoil, while a tight seal too early can trap pressure. The cloth allows gas to escape until the bung is fitted.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
