Greengage Jam

Ingredients

Directions

  1. Remove the stalks and stones from the greengages, and crack a few stones to set the kernels aside.

  2. Cover the bottom of a preserving pan with ½ inch of cold water, add the fruit and kernels, and bring to a boil slowly.

  3. Boil gently for 15 minutes.

  4. While boiling, place the sugar in a deep tin or dish in the oven to heat thoroughly.

  5. Gradually add the hot sugar to the fruit, continuing to boil until the jam sets quickly when tested on a cold plate.

  6. Pour the jam into pots, cover with paper brushed with egg white, and store in a cool, dry place.
