What each ingredient does

Green walnuts
Provide the bulk of the flavour base, releasing their juices and tannins into the vinegar during steeping.
Vinegar
Acts as the preserving liquid that extracts flavour from the walnuts and keeps the ketchup stable.
Anchovies
Add a savoury, salty depth that rounds out the sauce.
Shallots
Contribute a mild aromatic sharpness that softens during simmering.
Horseradish
Adds pungent heat that mellows somewhat during gentle simmering.
Port
Adds sweetness and wine-based richness to the sauce.

The step that matters

Straining after cooling. Straining only once the mixture has cooled lets the sauce settle and separates the fine solids, giving a clear, smooth ketchup that keeps better in bottles.

Swap the mace

How well each one fits the dish's main ingredients (walnut, vinegar, shallot, horseradish, nutmeg, ginger, clove):
