Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Provides rich flavour and fat, and sets firm as it cooks.
Flour
Gives the mixture body so the balls hold their shape in the fat.
Egg
Binds the mixture, and the whipped white adds lightness through trapped air.

The step that matters

Fold in the whipped egg white gently. Whipped egg white holds air in its foam. Stirring vigorously knocks that air out, so the balls turn dense instead of light and puffy.
