Barley Custard Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Mix the barley smoothly with a little cold milk.

  2. Boil the remaining milk and pour it over the barley, stirring continuously.

  3. Add the butter, sugar, and a pinch of salt, then return to the heat and stir until it boils.

  4. Cool slightly.

  5. Beat in the egg yolk.

  6. Fold in the stiffly whisked egg white.

Bake

  1. Pour the mixture into a buttered pie dish.

  2. Grate a little nutmeg on top.

  3. Bake gently at 350°F (175°C) for 10 minutes.

What each ingredient does

Patent barley
Thickens the milk as it cooks, giving the pudding its body and a soft, set texture.
Butter
Adds richness and a smooth, tender mouthfeel to the pudding.
Egg
Enriches the custard and helps it set; the whisked white adds lightness.
Milk
Forms the liquid base that the barley thickens into a creamy custard.
Castor sugar
Adds sweetness and balances the savoury notes of the barley and butter.

The step that matters

Fold in the stiffly whisked egg white. Folding gently keeps the air in the egg white; overmixing deflates it, so the pudding loses the lightness the whisked white is meant to give.

Swap the nutmeg

How well each one fits the dish's main ingredients (barley, butter, sugar, egg, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against barley, butter, sugar, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
