What each ingredient does

Beef
Forms the main body of the dish, becoming tender and juicy as it roasts slowly.
Coarse sea salt
Seasons the meat and helps draw out moisture to form a flavorful surface.

The step that matters

Searing the meat before roasting. A very hot sear browns the surface through the Maillard reaction, building flavor and color. Searing too gently leaves the meat pale and less flavorful.
