What each ingredient does

Arrowroot
Thickens the liquid into a smooth, soft texture when boiled.
Gelatin
Adds body and helps the mixture set softly as it cools.
Rich milk
Provides the main liquid, fat and creamy flavour of the porridge.

The step that matters

Stirring while the arrowroot and milk heat. Starches and milk proteins settle onto the bottom of the pan and scorch easily. Constant stirring keeps heat even and prevents a burnt taste, and arrowroot needs to be fully mixed in so it thickens smoothly without lumps.

Swap the arrowroot

How well each one fits the dish's main ingredients (gelatin, sugar, milk, cream):

  1. Potatofits better
  2. Sweet potatofits about as well
  3. Capsicumfits about as well
