Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Sweetbreads Eoasted

Ingredients

Directions

Prepare the sweetbreads

  1. Trim off the tough part of the sweetbreads.

  2. Scald them in a pot of water with a little salt for a few minutes.

  3. Transfer the sweetbreads to a basin of cold water until cool.

Coat and roast

  1. Beat the egg in a dish.

  2. Prepare fine bread crumbs and clarified butter.

  3. Run a skewer through the sweetbreads and secure them on a spit.

  4. Coat the sweetbreads with the beaten egg.

  5. Sprinkle bread crumbs over the sweetbreads, then drizzle with clarified butter, and add more bread crumbs.

  6. Roast the sweetbreads for 15 minutes.

Make the gravy and serve

  1. Remove from the skewer and prepare a gravy with butter, browned flour, hot water or lemon juice, and a pinch of cayenne.

  2. Heat the gravy and serve it under the sweetbreads.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; cooking gently in water firms and cleans them before roasting.
Egg
Binds the coating so the bread crumbs adhere to the sweetbreads.
Fine bread crumbs
Form a crisp, golden crust during roasting.
Clarified butter
Adds fat that promotes even browning and a rich flavor on the crust.
Browned flour
Thickens the gravy and adds a toasted, nutty flavor.

The step that matters

Roast the sweetbreads for 15 minutes. Clarified butter and bread crumbs need enough heat to brown without burning. Heat that is too low leaves the crust pale, while too long burns it before the interior is done.

Swap the lemon

How well each one fits the dish's main ingredients (egg, bread, butter, flour, pepper):

  1. Lemonthe original
  2. Figfits about as well
  3. Raisinfits about as well
  4. Plumfits less well

Fit is the average pairing score against egg, bread, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
