What each ingredient does

Macaroni
Provides the starchy body that makes the soup thick and filling as it cooks.
Milk
Forms the creamy liquid base that carries the other ingredients.
Cheese
Melts into the milk, adding richness and savoury flavour.
Butter
Adds fat and flavour, and the flour coating helps thicken the soup.

The step that matters

Let it simmer without boiling. Milk containing cheese can curdle, separate or scorch if it boils hard. Gentle heat keeps the soup smooth and creamy.
