Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Simmered slowly, it releases gelatin and flavour that give the broth body and savour.
Flour
Its starch thickens the liquid, giving the soup a smooth, slightly full texture.
Sweet cream
Adds richness and a silky mouthfeel, softening the savoury broth.
Lemon juice
Adds acidity that brightens the rich broth and cream.

The step that matters

Mixing the flour with the cream before stirring it in. Flour added dry clumps and stays lumpy. Mixing it with cream first spreads the starch evenly, so it thickens the soup smoothly when heated.
