Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Baked Shad

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, chopped parsley, beaten egg yolks, pepper, and coarse sea salt.

  3. Stuff the shad with the mixture and tie it with string.

Bake

  1. Place the shad in a baking pan, add bits of butter on top, and pour in a little water.

  2. Bake in the oven until cooked through, about 30-40 minutes.

What each ingredient does

Bread crumbs
Absorb moisture and bind the stuffing so it holds together during baking.
Beaten egg yolks
Bind the stuffing and add richness and structure as they set in the heat.
Butter
Adds fat that enriches the fish and promotes gentle browning on the surface.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (bread, parsley, egg, pepper, butter):

  1. Shallotfits better
