Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brisket of beef
Long simmering breaks down connective tissue, leaving the meat tender and moist.
Red wine
Adds acidity and depth of flavour to the gravy.
Flour
Thickens the cooking liquid into a gravy.
Tomato ketchup
Adds sweetness and acidity to the gravy.
Carrots
Release sweetness and body into the cooking liquid as they simmer.

The step that matters

Skimming the scum after boiling. Foam that rises as the water heats contains impurities that cloud the broth and can taint its flavour if left in, so it should be removed early.

Swap the mustard

How well each one fits the dish's main ingredients (beef, carrot, turnip, onion, clove, red wine, tomato):
