What each ingredient does

Beef or cold meat
Forms the body of the stew and becomes tender during long, slow cooking.
Flour
Browns with the lard to form a roux that thickens the stew.
Lard
Fat for browning the flour and carrying flavour into the stew.
Chopped onion
Adds sweetness and savoury depth as it softens in the stew.
Butter
Adds richness and fat to the seasoned meat.

The step that matters

Browning the flour in the lard. Cooking the flour until it browns develops a nutty flavour and colour, and it thickens the liquid evenly. Stirring constantly prevents scorching, which would make the stew taste bitter.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, butter, flour, marjoram, thyme):

  1. Shallotfits better
  2. Leekfits better
  3. Carrotfits better
