What each ingredient does

Cabbage
Forms the bulk of the pickle and keeps its crisp texture as it cures.
Coarse sea salt
Draws water out of the cabbage, softening it and concentrating its flavour.
Vinegar
Acidifies the brine, preserving the cabbage and giving it its sharp taste.
Sugar
Balances the sharpness of the vinegar with sweetness.
Onion
Adds aromatic sweetness and savoury depth to the packed jar.

The step that matters

Draining off the salt after 24 hours. Rinsing and draining thoroughly removes excess salt and surplus liquid; leftover salt makes the pickle overly harsh, while the cabbage must still be drained well so the vinegar brine is not diluted.

Swap the onion

How well each one fits the dish's main ingredients (cabbage, sugar, vinegar):

  1. Mustardfits better
  2. Radishfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against cabbage, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
