What each ingredient does

Cabbage
Forms the bulk of the relish and gives it a crisp, crunchy texture.
Mustard seed
Adds sharp, pungent flavour that mellows during pickling.
Vinegar
Acidity that preserves the vegetables and gives the relish its tang.
Sugar
Balances the sharpness of the vinegar with sweetness.
Cucumbers
Add crisp texture and fresh bulk to the mixture.

The step that matters

Pour the boiling vinegar over the mixture and seal tightly. The vinegar must be hot and cover the vegetables fully so no pieces are exposed to air, which helps prevent spoilage and keeps the crisp texture firm while sealing the jar.
