What each ingredient does

Gooseberries
The fruit being preserved, stored whole in the bottles.

The step that matters

Covering the gooseberries with water. Filling the bottles nearly to the top and covering the fruit fully with water keeps air away from it. Less air means slower spoilage and less browning during long storage.
