Baked Shad

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, chopped parsley, butter, pepper, coarse sea salt, and beaten egg yolks.

  3. Stuff the shad with the mixture and tie it with string.

  4. Place the shad in a baking pan, add bits of butter on top, and pour a little water into the pan.

  5. Bake in the oven until cooked through.
