Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Pork Cutlets
Ingredients
Directions
Remove the skin from the pork leg cutlets and pound them with a pestle.
In a bowl, mix bread crumbs, chopped sage, chopped onion, and beaten egg yolk.
Dip the cutlets in the egg mixture, then coat with the bread crumbs and season with salt and pepper.
Fry the cutlets in a small amount of lard until golden brown, turning often.
After frying, sprinkle a little flour into the pan drippings, stir, and bring to a boil to make gravy.
Pour the gravy over the cutlets before serving.
