Roast or Baked Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare a dressing by mixing bread crumbs, butter, pepper, and salt.

  2. Pour enough hot water over the mixture to combine it.

  3. Fill the chickens with the dressing and rub the outside with lard.

  4. Roast the chickens before the fire or bake in the oven at 400°F (200°C) with a piece of lard and a little water.

  5. Once cooked, remove the chickens and add water to the drippings.

  6. Dredge the mixture with flour, bring to a boil, and pour a little over the chickens.

  7. Serve the remaining sauce in a sauce tureen.
