Rinse the tripe in cold water.
Place it in a tub, sprinkle lime over it, and cover with tepid water. Let it soak for 4 hours.
Scrape the tripe clean. If it doesn't clean easily, add more lime and let it sit for another hour.
Wash the tripe in several waters.
Soak the tripe in a saltwater solution for 3 days, changing the water on the second day.
For a whiter appearance, after soaking, rinse off the salt and lay the tripe in buttermilk for 4 hours.
Wash the tripe clean again and cook as desired.
