Remarks on Boiled Puddings
Ingredients
Directions
Procure a tin mold or a clean bucket with a tight-fitting lid, or make a pudding bag 9 inches wide and 18 inches long.
Boil water in a pot or kettle.
Scald the pudding bag in boiling water, then dip it in flour.
Pour the pudding mixture into the bag, tying it tightly if it's a simple batter, or loosely if made with bread or cornmeal.
Ensure the water is boiling when you place the pudding in, and turn it frequently to prevent sticking.
Keep additional boiling water ready to add as needed.
When done, dip the bag in cold water and turn it out onto a china dish, untie the string, and roll back the bag to remove the pudding intact.
