What each ingredient does

Cabbage
Forms the crisp, sturdy body of the pickle that holds its texture in brine.
Coarse sea salt
Draws water out of the cabbage, softening it and concentrating its flavor before packing.
Sugar
Balances the sharp acidity of the vinegar with a touch of sweetness.
Onion
Adds savory depth and aroma that mellows during pickling.
Vinegar
Acidifies the cabbage, preserving it and giving the pickle its tang.

The step that matters

Draining off the salt after 24 hours. Salt draws water out of the cabbage through osmosis. If the salt is not rinsed or drained off well, the pickle will be overly salty, and too little draining leaves excess moisture that dilutes the vinegar brine.

Swap the onion

How well each one fits the dish's main ingredients (cabbage, sugar, vinegar):

  1. Mustardfits better
  2. Radishfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against cabbage, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
