Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Broiled Lamb's Livers

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut lamb's livers into small slices and place them in a bowl.

  2. Pour a little oil over the livers and season with coarse sea salt.

  3. Sprinkle chopped parsley over the livers and roll them in bread crumbs.

  4. Arrange the livers side by side on a grill.

  5. Broil at 400°F (200°C), turning and basting with oil using a brush or a bunch of parsley.

  6. Once the liver is set, serve the slices, basting with oil mixed with chopped parsley and lemon juice.
