To Roast Turkey

Ingredients

Directions

Prepare the turkey

  1. Clean and wash the turkey well, seasoning it with salt and pepper inside and out.

  2. Mix the bread crumbs and butter in a bowl, adding salt and pepper to taste.

  3. Fill the cavity of the turkey alternately with spoonfuls of bread crumbs and oysters until full.

  4. Lard the top of the turkey and let it stand for a while before baking.

  5. Pour a little water into a roasting pan.

  6. Add salt, pepper, and butter to the pan.

Roast and baste

  1. Bake the turkey for 3 to 4 hours, basting often with the reserved oyster liquor.

Make the gravy and serve

  1. Boil the giblets until tender.

  2. Chop the boiled giblets together with the liver.

  3. Place the cooked turkey on a hot platter and prepare the gravy.

  4. Pour the pan drippings into a pot, remove excess fat, and add a cup of water.

  5. Mix a little flour with water for thickening.

  6. Add the giblets, liver, and a few oysters to the mixture.

  7. Let the gravy boil, stirring constantly.

  8. Pour the gravy into a gravy boat to serve.

What each ingredient does

Turkey
Forms the main body of the dish and provides the meat and drippings for gravy.
Bread crumbs
Absorb juices and butter in the cavity, adding moisture and a soft, savory filling texture.
Butter
Adds fat for richness and helps the stuffing and pan juices brown and taste rounder.
Oysters
Add a briny, savory flavor to the stuffing and to the gravy.
Flour (in the method)
Thickens the pan drippings into a smooth gravy.

The step that matters

Baste with the oyster liquor during roasting. Basting over the long roast adds moisture to the surface and helps the skin brown evenly, while the cavity stuffing needs to reach a safe, fully cooked temperature, so the bird should be checked rather than judged by time alone.
