Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Provides the main meat, which becomes tender through long simmering in water.
Carrots
Add natural sweetness and hold their shape during long simmering.
Turnips
Contribute a mild, slightly peppery flavour and firm texture after cooking.
Cabbage
Adds sweetness and moisture as its leaves soften in the cooking liquid.
Potatoes
Soak up the seasoned cooking liquid and become soft, starchy and filling.

The step that matters

Draining the first water. Corned beef is cured in salt, so boiling it briefly and discarding that water removes excess surface salt, keeping the final broth and dish from tasting overly salty.

Swap the potato

How well each one fits the dish's main ingredients (beef, carrot, turnip, cabbage, pepper):

  1. Leekfits better
  2. Parsnipfits better
  3. Broccolifits better
  4. Potatothe original

Fit is the average pairing score against beef, carrot, turnip, cabbage, pepper. Candidates are from the same food group and used in at least 100 recipes.
