What each ingredient does

Celery
Provides crisp texture and a fresh, mildly vegetal bite to the salad.
Apples
Add crisp texture and natural sweetness that balances the savory dressing.
Lemon juice
Adds acidity that brightens the flavor and slows browning of the cut apples.
Pistachio nuts
Contribute crunch and a nutty flavor to both the garnish and the dressing.
Mayonnaise dressing
Adds richness and creaminess that coats the celery and apples.

The step that matters

Sprinkling the apples with lemon juice. Cut apples oxidise and turn brown quickly when exposed to air. Acidic lemon juice slows this enzymatic browning, so the apples should be treated right after cutting and before chilling.
