Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the main body of the pickle, becoming crisp-tender as they are scalded and then soaked in syrup.
Alum
Helps the cucumber tissue stay firm so the pickles do not turn soft during cooking.
Vinegar
Provides the sour, acidic flavour and helps preserve the pickles.
Sugar
Sweetens the pickles and balances the sharpness of the vinegar.
Ginger root
Adds a warm, aromatic flavour to the syrup.

The step that matters

Scalding the cucumbers. Scald them only until tender but not soft. Over-cooking breaks down the cell walls, so the pickles turn mushy and lose their bite.

Swap the ginger

How well each one fits the dish's main ingredients (cucumber, vinegar, sugar):

  1. Tarragonfits better
  2. Cinnamonfits better
  3. Dillfits better
  4. Gingerthe original

Fit is the average pairing score against cucumber, vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
