Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Oysters on Toast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Remove the gills from the oysters and set aside.

  3. Toast the bread slices until golden brown.

Cook and serve

  1. In a pan, melt the butter and add the oysters, salt, pepper, and lemon juice.

  2. Cook for 2-3 minutes until the oysters are just firm.

  3. Place the toasted bread on a serving plate and top with the cooked oysters.

  4. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main ingredient, cooking to a tender, just-firm texture with a briny flavor.
Bread
Provides a crisp, golden base that holds the oysters and contrasts their soft texture.
Butter
Adds fat and richness, carrying flavor and helping the oysters brown lightly in the pan.
Lemon juice
Adds acidity that brightens the rich butter and the mild, briny oyster flavor.

The step that matters

Cook the oysters for 2-3 minutes until just firm. Oyster proteins tighten quickly with heat. Cooking past the point of just firm makes them rubbery and dry, so watch them closely and remove them as soon as their edges curl and they firm up.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, bread, butter, pepper):

  1. Lemonthe original
  2. Figfits about as well
  3. Plumfits less well
  4. Grapefits less well

Fit is the average pairing score against oyster, bread, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
