Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the flour, sugar, and cream of tartar together and sift seven times.

Make the batter

  1. In a separate bowl, beat the egg whites to stiff peaks.

  2. Gently fold the egg whites into the flour mixture along with the vanilla extract.

Bake

  1. Pour the batter into an ungreased tube pan and bake for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the starch and structure that hold the cake's crumb together.
Granulated sugar
Sweetens the cake and helps keep the egg white foam stable and tender.
Egg whites
Trap air when beaten, which lifts the cake and gives it its airy texture.
Cream of tartar
Acidifies the egg whites, helping the foam hold its shape when beaten.
Vanilla extract
Adds aroma and flavor to the mild cake.

The step that matters

Folding in the egg whites. The cake rises from the air held in the beaten whites. Stirring or mixing vigorously deflates the foam, so the batter should be folded gently to keep the batter light and the cake from turning dense.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, cream, egg):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against flour, sugar, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
