Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; frying in butter browns the surface and gives a rich, savory crust.
Butter
Fat for frying that browns the sweetbreads and carries flavor into the sauce.
Mushrooms
Add earthy flavor and chewy texture to the sauce.
Flour
Thickens the sauce so it clings to the sweetbreads.
Sherry wine
Adds acidity and depth to the sauce.

The step that matters

Thickening the sauce with flour. Flour must be stirred into the hot liquid so it disperses evenly; added in lumps or too quickly it stays grainy and the sauce will not reach a smooth, creamy consistency.

Swap the allspice

How well each one fits the dish's main ingredients (butter, mushroom, flour, sherry, wine, clove, pepper):

  1. Thymefits better
  2. Cinnamonfits better
  3. Nutmegfits about as well
  4. Allspicethe original

Fit is the average pairing score against butter, mushroom, flour, sherry, wine, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
