Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Singe, draw, and wash the turkey.

  2. Remove the crust from the bread and crumble it finely.

  3. Melt the butter in a large saucepan, then add the bread crumbs, black pepper, and salt.

Stuff and truss

  1. Salt the inside of the turkey and fill it with the stuffing, then sew it up.

  2. Turn the wings back and tie the legs down.

Roast and make gravy

  1. Roast the turkey at 350°F (175°C) for at least 3 hours, basting often.

  2. Occasionally pour melted butter over the turkey and sprinkle with flour.

  3. Chop the giblets and add them to the sauce made with turkey fat, flour, and enough milk to achieve the desired gravy consistency.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish and provides the meat that cooks through during roasting.
Bread
Forms the stuffing, absorbing the butter and juices and adding soft texture inside the bird.
Butter
Adds fat that enriches the stuffing and helps the skin brown and stay moist during roasting.
Flour
Sprinkled on the bird and used in the sauce to thicken the gravy.

The step that matters

Roast the turkey at 350°F (175°C) for at least 3 hours, basting often. Basting with melted fat keeps the surface moist and helps it brown evenly, while the long roast lets the thickest parts, including the stuffing in the cavity, reach a safe internal temperature.
