Directions

Make the forcemeat

  1. Remove the meat from the chicken breasts and grind it using a meat grinder.

  2. Rub the ground chicken through a coarse sieve with a heavy spoon or potato masher.

  3. In a saucepan, combine the bread crumbs and cream; optionally add garlic, cloves, and onion for flavor.

  4. Cook the mixture slowly for 15–20 minutes.

  5. Stir in the melted butter, salt, pepper, and ground chicken.

  6. Fold in the beaten egg whites.

Make the filling

  1. Make a white sauce by cooking cream and flour in a double boiler.

  2. Add the chicken and truffles to the sauce.

  3. For the filling, mix the diced cooked chicken with chopped mushrooms, flour, salt, pepper, and chopped truffles.

Assemble

  1. Butter small molds.

  2. Line the molds with the forcemeat mixture.

What each ingredient does

Chicken breasts
Provide the main protein, which is ground into a smooth, binding forcemeat.
Egg whites
Set during cooking and give the timbales structure and a light, tender texture.
Bread crumbs
Absorb cream and help bind the forcemeat so it holds its shape.
Cream
Adds moisture and richness, keeping the forcemeat soft and tender.
Butter
Adds fat for richness and a smooth, tender mouthfeel.
Truffles
Contribute a strong, earthy aroma that flavours the filling.

The step that matters

Fold in the beaten egg whites. Egg whites must be folded gently so they keep their air; overmixing deflates them, and the timbales lose the light, set structure they give when cooked.

Swap the white pepper

How well each one fits the dish's main ingredients (chicken, cream, bread, butter, egg, mushroom, flour):

  1. Nutmegfits better
  2. Garlicfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against chicken, cream, bread, butter, egg, mushroom, flour. Candidates are from the same food group and used in at least 100 recipes.
