Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fish Timbales

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the mixture

  1. In a bowl, combine the cooked minced fish, eggs, sweet milk, salt, and pepper.

  2. Add the crushed soda crackers to the mixture and stir well.

Bake and serve

  1. Grease timbale cups with butter and pour the mixture into them.

  2. Place the cups in a shallow pan filled halfway with hot water.

  3. Bake for 20 minutes.

  4. Turn the timbales out onto a platter.

  5. In a small bowl, mix Worcestershire sauce and minced parsley, then pour over the timbales.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the fish and milk together and set into a firm, sliceable custard when baked.
Cooked minced fish
Provides the main body and flavor of the timbales.
Sweet milk
Adds moisture and softness to the custard as it bakes.
Soda crackers
Absorb liquid and add body so the mixture holds its shape.

The step that matters

Baking in a water bath. Setting the shallow pan with hot water around the cups moderates the oven heat, so the egg custard cooks gently and stays smooth rather than curdling, puffing or drying out.

Swap the parsley

How well each one fits the dish's main ingredients (fish, egg, milk, pepper, butter, sauce):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Capersfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against fish, egg, milk, pepper, butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
