What each ingredient does

Eggs
Whole yolks bind the mixture, while whipped whites lighten it and help it set as it bakes.
Sweetbreads
Provide the main body and tender texture of the timbales.
Stale wheat bread
Soaked and mashed, it adds moisture and softness to the mixture.
Mushrooms
Add moisture and earthy flavor to the filling.
Truffles
Add a concentrated, aromatic flavor to each timbale.

The step that matters

Gently fold in the stiffly beaten egg whites. Folding gently keeps the air trapped in the whites, so the timbales rise lightly and set with a delicate texture instead of becoming dense.

Swap the onion
