Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the dish.
Heavy cream
Forms a rich, smooth sauce that carries the other ingredients.
Flour
Thickens the cream into a sauce when cooked with butter.
Butter
Enriches the sauce and, with flour, forms the thickening paste.
French button mushrooms
Add earthy flavor and soft texture to the creamed mixture.

The step that matters

Thicken the cream with flour rubbed to a paste with butter. Adding flour directly to hot cream can form lumps. Rubbing it into butter first coats the starch granules so they disperse evenly and thicken the sauce smoothly.

Swap the onion

How well each one fits the dish's main ingredients (cream, flour, butter, mushroom, sauce):

  1. Shallotfits better
  2. Spinachfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against cream, flour, butter, mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
