  2. Disjoint the chicken.

  3. Remove the skin, sinews, and bones.

  4. Cut the meat from the thighs and breast into long thin strips, and set aside.

  2. Add the cracker crumbs.

  3. Moisten with hot stock.

  4. Season to taste.

Stuff and tie

  1. Fill the legs and wings of the turkey with the mixture.

  2. Layer the fillets, force-meat, and slices of tongue or ham inside the turkey.

  3. Sew the turkey.

  4. Tie the turkey into its natural shape.

Cook and serve

  2. Cover with cold water.

  3. Steam the turkey over the bones for three hours.

  4. Remove the cloth.

  5. Dredge with salt and flour.

  6. Bake at 400°F (200°C) for one hour or until browned.

  7. Serve cold, garnished with parsley, jelly, carrots, and potato balls.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main meat that is boned, cut into strips, and chopped into the filling.
Veal
Blends with the chicken in the force-meat, adding a softer, more tender texture.
Cracker crumbs
Absorb the hot stock and give the force-meat body and a firm, sliceable texture.
Eggs
Bind the chopped meat and crumbs together so the stuffing holds its shape.
Potted ham or tongue
Adds savory flavor and fat to the stuffing and the layered slices inside the bird.

The step that matters

Steam the turkey over the bones for three hours. Gentle moist heat cooks the dense, stuffed bird evenly and keeps the meat from drying out. The long steam must finish fully before the browning bake, or the centre stays underdone.

Swap the thyme

How well each one fits the dish's main ingredients (chicken, veal, egg, pepper, ham):

  1. Parsleyfits about as well
  2. Tarragonfits about as well
  3. Marjoramfits about as well
  4. Thymethe original

Fit is the average pairing score against chicken, veal, egg, pepper, ham. Candidates are from the same food group and used in at least 100 recipes.
