Scolloped Clams

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wash the clam shells thoroughly.

  2. Boil the clams in a pot of water until the shells open.

  3. Remove the clams, drain them, and chop into small pieces, discarding the toughest parts.

  4. Season the clams with black pepper and powdered mace.

  5. Mix the clams with grated bread crumbs and fresh butter.

  6. Fill the cleaned clam shells with the mixture, moistening slightly with clam liquor.

  7. Cover the mixture with grated crumbs and add a small bit of butter on top.

  8. Bake in a 400°F (200°C) oven until light brown.

  9. Serve in the shells on suitable dishes.
