Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tongue

  1. Boil the beef tongue until tender, then remove the skin.

  2. Season the tongue with coarse sea salt and black pepper.

Assemble and bake

  1. Place the tongue in a pan and pour rich gravy over it.

  2. Make deep incisions on top and fill them with herbs and bread crumbs.

  3. Grate additional bread over the tongue.

  4. Bake in a preheated oven at 400°F (200°C) for 15 to 20 minutes.

  5. Garnish with baked tomatoes or mushrooms before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef tongue
Forms the main meat, becoming tender through prolonged boiling before baking.
Rich gravy
Adds moisture and savory flavor while the tongue bakes in the pan.
Bread crumbs
Absorb juices and form a lightly crisp, browned topping when baked.
Additional bread for grating
Creates a crisp, golden crust on the surface during baking.

The step that matters

Boil the beef tongue until tender. Tongue is a dense, connective-tissue-rich muscle that only softens fully with long, gentle cooking in water. Stopping early leaves it tough, and the later baking step cannot fix that texture.

Swap the tomato

How well each one fits the dish's main ingredients (beef, pepper, bread):

  1. Tomatothe original
  2. Capsicumfits about as well
  3. Carrotfits less well
  4. Potatofits less well

Fit is the average pairing score against beef, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
