What each ingredient does

Eggs
Bind the coating to the cutlets and help it adhere during frying.
Bread crumbs or fine crackers
Form a crisp, browned crust around the cutlet during frying.
Veal cutlets
Provide the lean meat that is cooked through and served.
Milk
Thins the egg mixture so it coats the cutlets evenly.
Lard
Conducts heat for frying and adds richness and browning to the crust.

The step that matters

Fry the cutlets slowly in hot lard. Frying slowly lets the heat reach the centre of the cutlet and cook it through while the crumb coating browns gradually. Too fast a fry can scorch the crust before the meat is done.
